| First pour only 1/2 a gallon into the granita machine. Cap the lid. Turn it upside down and shake well till you dissolve all the fruit at the bottom. Now pour the rest into the granita machine. To assure proper granita consistency and color, while the granita machine is in operation, liquid level must always cover the rotating blades. If using milk, as in Tiramisu, write the milk expiration date on the gallon jug. Furthermore, write the same date on the granita hopper containing the milk. Always discontinue serving on the milk expiration date! |
