TWO WAYS TO SERVE A GRANITA:

Virgin Granita:
Just fill with water to the water line and cap the lid. Turn Gallon jug upside down. Shake very well till evenly mixed.

Note:

First pour only 1/2 a gallon into the granita machine. Cap the lid. Turn it upside down and shake well till you dissolve all the fruit at the bottom. Now pour the rest into the granita machine.

To assure proper granita consistency and color, while the granita machine is in operation, liquid level must always cover the rotating blades.

If using milk, as in Tiramisu, write the milk expiration date on the gallon jug. Furthermore, write the same date on the granita hopper containing the milk. Always discontinue serving on the milk expiration date!

Alcoholic Granita:
Two ways to serve an alcoholic granita:

Best way:
For example: take a 9 oz. cup and cover just the bottom of the cup with liqueur of your choice - 3/4 oz. liqueur. Now pour into it any virgin granita–the alcohol will rise to the surface–stir and serve! This allows you to take one virgin granita and flavor it with an infinite number of alcoholic flavors.

Add alcohol to the gallon jug:
If the granita gallon jug is to be activated with water, then first add 12 oz. of liqueur and then continue with tap water to the water line. Shake well and pour into the granita machine.

If the granita gallon jug needs to be first filled with milk, as with Tiramisu, then first add milk to the milk line, then add 12 oz. of liqueur and then continue with water to the water line. Shake well and pour into the granita machine. Always discontinue serving on milk expiration date!
